Zucchini Bread

Here’s a quick bread recipe that is a healthy treat for any time of the day. Made with zucchini, this moist bread is a tasty way to slip healthy veggies into your breakfast or snack.


  • Servings: 32
  • Serving Size: 1 slice (1/2 inch each)


  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup applesauce
  • 1 cup sugar
  • 2/3 cup olive oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups grated zucchini
  • 1/2 cup chopped walnuts, toasted


  1. Preheat oven to 350°.
  2. Lightly coat a 9 x 5-inch loaf pan with nonstick cooking spray.
  3. Into a medium bowl, sift flours, cinnamon, baking soda, baking powder and salt.
  4. In a large bowl, beat sugar, applesauce, oil, eggs and vanilla.
  5. Mix in zucchini.
  6. Add dry ingredients and walnuts and stir well.
  7. Transfer batter to prepared pan.
  8. Bake until tester inserted into center comes out clean, about 1 hour 20 minutes.
  9. Cool bread in pan on rack for 15 minutes.
  10. Cut around bread to loosen. Turn out onto rack and cool completely.
