Veggie Wrap

Here’s a healthy sandwich recipe that’s perfect for your next picnic. This veggie wrap with creamy avocado is a delicious vegetarian sandwich you can pack up and take on the go.

Suggested Serving Size

1 wrap


  • 1 medium zucchini, cut into 1/4-inch slices
  • 1 tsp olive oil
  • Black pepper to taste
  • 1/2 cup garlic hummus
  • 6 whole wheat or multigrain tortillas (8-inch diameter)
  • 1 Tbsp pine nuts
  • 2 carrots, shredded
  • 1 bell pepper, sliced thin
  • 1/2 avocado, peeled and sliced
  • 1 1/2 cups lightly packed spinach
  • 1 small red onion, sliced thin


  1. Brush the zucchini with the olive oil and season with the black pepper. In a skillet over medium heat, sauté the zucchini until lightly browned, about 4 minutes.
  2. Evenly spread the hummus over each tortilla. Sprinkle the pine nuts over the hummus. Top with zucchini, carrots, bell pepper, avocado, spinach and onion. Roll up each wrap and cut in half on the diagonal.
