Turkey Artichoke Panini

Instead of a boring turkey sandwich, try this gourmet Turkey Artichoke Panini. It is about 200 calories per sandwich, and it is loaded with flavor.

Ingredients

  • 1 red bell pepper
  • 2 Tbsp marinated artichoke hearts
  • 2 Tbsp reduced-fat garlic and herbs spreadable cheese
  • 1/2 cup coarsely chopped baby spinach
  • 4 slices light whole wheat bread, 1/2-inch thick
  • 4 oz cooked turkey breast, sliced

Preparation

  1. Preheat broiler. Place a red pepper on a broiler pan and roast under the broiler. With tongs, rotate until all sides are charred. Transfer pepper to a bowl and cover with plastic wrap. Allow pepper to cool for 5 minutes. Peel the pepper, remove the core and seeds and slice pepper into slivers. Set aside half the roasted pepper slices and refrigerate remaining half for future use.
  2. Heat closed contact grill, panini maker or grill pan for 5 minutes.
  3. Place artichoke hearts on paper towels; pat dry. Coarsely chop artichoke hearts. In a small bowl, mix artichoke hearts, spreadable cheese and spinach. Spread mixture on 2 bread slices. Top with half of the roasted pepper and turkey. Top with remaining bread slices. Spray both sides of sandwiches with nonstick cooking spray.
  4. When grill is heated, place sandwiches on grill. Close grill and cook for 3 to 5 minutes or until bread is toasted and cheese is melted.
