Tomato Mango Salad

This refreshing summer salad pairs sweet and salty flavors with fresh tomatoes and mango plus a hint of blue cheese. A simple, low calorie basil salad dressing can be made in minutes.

Suggested Serving Size

3/4 cup


  • 1/4 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup chopped red onion
  • 1/8 tsp salt
  • 1/3 cup chopped fresh basil leaves plus additional whole basil leaves, for garnish
  • 5 Roma tomatoes (about 1 1/2 lbs), sliced 1/4-inch thick
  • 3 large ripe mangos, peeled and sliced 1/4-inch thick
  • 1/3 cup crumbled blue cheese


  1. Make the dressing: In a small bowl, combine the vinegar, olive oil, red onion and salt, and whisk to combine well. Add the chopped fresh basil and stir to combine.
  2. Prepare the salad: On a large platter, arrange the tomato and mango slices. Stir the dressing and drizzle over the tomatoes and mangoes. Sprinkle the blue cheese on top and garnish with whole basil leaves.
