Rotini Pasta Salad

This rotini pasta salad is perfect to tote on a picnic. Healthy, easy and fast, it's also a great dish for summer cookouts when you want to prepare your sides ahead of time.

Ingredients

  • 12 oz protein rotini pasta
  • 1 1/2 cups cherry tomatoes, halved
  • 1 medium red bell pepper, stemmed, seeded and chopped
  • 1 medium red onion, peeled and finely chopped
  • 1 medium English cucumber, washed and chopped
  • 1 cup fresh broccoli florets
  • 1 can (6 oz) reduced sodium black olives, drained, rinsed and sliced
  • 1 cup fat-free Italian dressing
  • 1/2 cup part-skim mozzarella cheese, cubed

Preparation

  1. In a large pot, cook pasta according to package directions. Drain and rinse in cold water.
  2. In a large bowl, combine cooked pasta with tomatoes, bell pepper, onion, cucumber, broccoli, olives and dressing. Add cheese and toss gently. Cover with plastic wrap and chill for at least 2 hours. Toss salad before serving.
