Yellow and Red Tomato Fresco


  • 1 vine-ripened tomato, seeded and diced
  • 1 yellow tomato, seeded and diced
  • 1/2 small red onion, peeled and finely chopped
  • 1/4 cup fresh basil leaves, finely chopped
  • 1 small clove garlic, peeled and finely chopped
  • 1/4 cup red wine or balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • Freshly ground black pepper


In a mixing bowl, combine the tomatoes, onion, basil, and garlic together, toss with the vinegar and oil to coat, and season with pepper. Serves 4.
